How do I get my daughter to eat more?

My daughter is 2 and is a very picky eater. She is still on whole milk (as she JUST turned 2 and is still finishing the gallon of whole we had in the fridge) so I know she's getting the extra fat and calories. She won't eat a lot of food. I think her biggest hurdle is the texture. She doesn't like things that are wet or slimy, so she won't eat grapes for example. I have a hard time getting her to eat much beyond chicken, fries, hot dogs, crackers, rice... How can I interest my daughter in healthier and more varied options?
